Strawberry Cheesecake Ice Cream

Oh, yum!  Who doesn't love homemade ice cream?  This recipe is from a July 2000 issue of Gourmet magazine.  This one is so easy because there is no cooking involved.

1 qt. strawberries, rinsed & hulled
8 ounces cream cheese, softened
3/4 cup sugar
1 cup milk
1 T. lemon juice
pinch salt
1 2 cup heavy cream

Puree the strawberries & add the cream cheese, sugar, milk, lemon juice & salt.  Blend well.  Stir in the heavy cream & chill completely & then freeze in an ice cream maker.

  1. My mother used to make us the best homemade ice cream ever. I really miss that part of the old days. I would love to have a big helping of yours now. No one tends to make it the old fashion way anymore.
