Onions on the Grill

YUM!
This recipe comes from Paula Deen's  The Lady and Sons, Too! cookbook.  Her title for the onions is "Saturday Night Vidalia Onions".  I've been making them for years and was telling a dear friend about them and how good they are.  I don't have any Vidalia onions, but I do have Texas Sweet ones.  This recipe is especially fun because the onions, once cooked, taste like a delicious onion soup!!  If you've never tried this recipe,  please do so this grilling season.  You'll be glad you did!

1 large sweet onion, per person
1 T. butter, per onion
1 beef bouillon cube, per onion

Prepare grill.  Trim a slice from the top of each onion and peel the onion without cutting off the root end.  Next, cut a small cone-shaped section from the center of  the onion.  Cut the onion into quarters from the top down, stopping within a half inch of the root end. 

Place a bouillon cube in the center , slip slivers of butter in between the sections and sprinkle with pepper.  Wrap each onion in a double thickness of heavy-duty foil.  Place the onions directly onto the hot grill for 45 minutes, turning every so often. 

These can also be baked in a 350 degree oven for 45 minutes.

Serve in individual bowls because they make a lot of broth, which tastes, surprisingly,  like french onion soup!!!

  2. I have never, ever, ever in my life heard of eating an onion just by itself. You make it sound so good, though, that I am totally intrigued now. I am going to have to do it!!! I'm afraid of the onion falling apart when I pick it up to turn it, though. I'm not the world's best or brightest when it comes to grilling, so please bear with me! :-) I AM going to try it. I just had French onion soup over the weekend and remember how good it was, so I'm up for this! I think I'm going to try it in the oven the first time around!

  6. I'm with Alycia on this one. I've heard of onion dishes but never anything like this and I thought I'd seen it all. Wow this is really interesting and I know my husband would love it. (Me too) I just served French Onion soup as my first course at my luncheon last Friday. And its SO good. So this must be awesome too. Am surprized it would make so much broth. Onions must have alot more water in them than I realized. Well I'm going to give it a try. I know if you make them and like them then they must be a winner. Thanks for sharing!!

  8. I love grilled onions...especially Vidalias. (I am a Georgia girl after all.) Good news for us...Market Street has the super-sized ones that are sold separately, and Kroger has medium ones in a bag. We are grilling steaks this week, and I am definitely putting these on the menu. I haven't made them in years!

  9. Every time we grill, my dad wants to toss onions out there because he loves them. This recipe sounds right up his alley. I never would have thought to add the bouillon, but the broth sounds like a wonderful surprise since I wouldn't have expected that.   18. We had these for dinner tonight, baked rather than grilled. Oh my, the aroma wafting from my kitchen had everyone stopping by, asking what I was making and when dinner was. My SIL even asked me how I made them. :)) and now my daughter has your recipe. Thank you.
