Texas Sheet Cake

This recipe comes from a good friend that I worked with many years ago.  I've adapted the procedure a little and also added the cinnamon.  If you're a cinnamon and chocolate lover, you'll love this cake.  It's easy, moist and oh, SOOOO good!

Cake:
2 cups sugar                                     
2 cups flour
1/4 cup cocoa powder
1 t. baking soda
1/2 t. salt
1 t. cinnamon
1 stick butter
1/2 cup oil
1 cup water
1/2 cup buttermilk
2 eggs, beaten
1 t. vanilla

Sift together all the dry ingredients into a large bowl.

Put the butter, oil, water, buttermilk into a saucepan and bring to a boil.  Add to the dry ingredients and mix well.  Add the beaten eggs and the vanilla.

Pour into a greased 9 x 13 inch pan, or a greased jelly roll pan.  Bake at 400 degrees for 20-30 minutes.  While cake is baking, make the icing.

Fudge Icing:

1 stick butter
1/4 cup cocoa powder
6 T. milk or buttermilk
1 box powdered sugar (about 4 cups)
1 t. vanilla
pinch of salt

Bring the butter, cocoa powder and milk to a boil.  Add the powdered sugar, vanilla and salt.  Mix well and pour over cake right when it comes out of the oven.

  4. Back when I could eat sugar and lived in Texas....I loved to make a big chocolate sheet cake! This looks divine! And the ice cream would go good with it, too! Enjoy your day! I'm going to look for some sugar free fudge bars in the freezer! heehee!

  7. Texas sheet cake with cinnamon! What could be better than that? I haven't seen the Texas sheet cake recipe in years. An old friend of mine used to make it in a jelly roll pan...thin-ish cake and yummy icing. I always think the buttermilk is what makes it so good. Yum, Thanks for sharing the recipe.

  12. Hi Kitty, Texas sheet cake is my favorite cake ever; I've made it many times. A twist is to bake it until it's almost done (about 2" left); cover the top with marshmallows, return to the oven for the 2". You still frost it. It adds a layer of gooey goodness. This icing is super good too. Glad you shared your recipe so others can enjoy it too. Take my word for it, ladies: THIS CAKE IS FABULOUS!!!

  17. Kitty, I grew up on this very cake recipe and I make it all the time for family and friend get togethers. I have never found another nearly as good as the plain ole Texas Sheet Cake.

  18. ok...i've decided on your Texas Sheet cake....can't go wrong with that. :))
    I'm going to make the cake and freeze it...then, the day of my Bunco gathering, I'll take it out of freezer, warm it just a bit and pour on the fabulous fudge icing. Think that will work or should I just make the cake fresh that morning.?
    Actually, it doesn't take long to whip it up so guess I'd better do that.
